How to make mug cakes: an easy, no mess treat

Looking for a quick dessert? Randev Jayasinha has the perfect solution with his simple mug cake recipe…

I love to cook and bake, but sometimes I just need something in a hurry and I can’t be fussed with getting equipment out and and making an entire kitchen top messy . The worst part of all this is the washing up after everything is done. So, I began my search for some easy to make, no mess, easy to clean up delicious desserts, and I came across the mug cake.

The Mug cake requires nothing more than a decent sized mug, a working microwave and the basic kitchen essentials, i.e Flour, Sugar, Milk, Neutral oil (vegetable, sunflower) and Baking Powder. These are the only ingredients you will need to make a mug cake, and once you’ve got the ratios figured out, you can add or substitute certain ingredients to make whatever cake you want. Be it a Chocolate lava cake, Carrot Cake, Banana and Peanut butter cake or even a Red Velvet Cake, the world is your oyster.

For me personally, I found the quintessential dessert that hits the spot every time to be a Chocolate and Nutella cake. So simple it can be prepared in ten minutes. Pair it with a scoop of vanilla ice cream and you’ve got the perfect pudding to satisfy that late-night sweet tooth.

Ingredients:
Flour, Sugar, Cocoa powder, Baking Powder, Neutral oil, Milk, Nutella

Method:
In a mug combine…
2 Tablespoons of Flour
1 Tablespoon of Cocoa powder
1 Tablespoon of Sugar
¼ Teaspoon of Baking powder
Mix up the dry ingredients with a fork till well combined.

Then add…
1 Tablespoon of Neutral oil
3 Tablespoons of milk
And mix till you can visibly see no lumps.

Afterwards, using a Teaspoon, scoop up a serving of Nutella (Be decent) and place in the middle of the mug covering it up slightly with the mixture (If you don’t mix it in, it stays runny once it comes out the microwave like a lava cake).

Cook in the microwave on full power for a minute (I leave mine in for a minute and 15, but it depends on the appliance).

Serve with a scoop of ice cream and enjoy!
